Grilled Octopus with Lemon Herb Butter Sauce

Clean the octopus thoroughly, especially the inner cavity.

In a pot of boiling water, add onion, bay leaves, and lemon halves.

Dip the octopus in and out of the water a few times until the tentacles start to curl, then leave it in the water.

Reduce heat and let the octopus simmer for about 90 minutes until tender.

Prepare the sauce by mixing melted butter, olive oil, lemon juice, finely chopped onion, parsley, garlic, salt, pepper, and chili flakes.

Remove the octopus from the pot, trim off the head, and separate the tentacles.

Coat the tentacles in the prepared sauce.

Heat a grill pan or outdoor grill and place the tentacles on it. Brush with additional sauce while grilling.

Grill until the tentacles are golden with a slight crust.

Serve warm, drizzled with the remaining sauce.
