For the Dressing:
Instructions

Dice the potatoes and fry them in hot oil until golden and crispy. Remove and set aside to cool.

Dice the eggplant and fry it in the same oil until tender and browned. Remove and set aside to cool.

In the same oil, fry the falafel until crispy, then set aside to cool.

Chop the lettuce and place it in a serving dish.

Add the fried eggplant and potatoes on top of the lettuce.

Add diced cherry tomatoes or regular tomatoes.

Cut the falafel into small pieces and place them over the salad.

Top the salad with sliced pickled cucumbers.

Drizzle the dressing over the salad evenly.

Add sumac and freshly chopped mint leaves on top of the salad.
