For the Dressing:
Instructions
- Dice the potatoes and fry them in hot oil until golden and crispy. Remove and set aside to cool.
- Dice the eggplant and fry it in the same oil until tender and browned. Remove and set aside to cool.
- In the same oil, fry the falafel until crispy, then set aside to cool.
- Chop the lettuce and place it in a serving dish.
- Add the fried eggplant and potatoes on top of the lettuce.
- Add diced cherry tomatoes or regular tomatoes.
- Cut the falafel into small pieces and place them over the salad.
- Top the salad with sliced pickled cucumbers.
- Drizzle the dressing over the salad evenly.
- Add sumac and freshly chopped mint leaves on top of the salad.
