Egyptian Beef Shawarma in Buns with Tahini

Mix all marinade ingredients in a bowl until well combined. Add beef strips and coat them evenly. Cover and let marinate for at least 1 hour in the fridge.
Prepare the tahini sauce by mixing tahini with warm water gradually, stirring continuously until smooth. Add vinegar, salt, black pepper, coriander, cumin, chili (if using), minced garlic, and a drizzle of olive oil. Stir well and set aside.
Heat a skillet over medium-high heat, add cooking oil, and sauté the marinated beef strips. Cook in batches to avoid overcrowding.
Once the beef is well-seared, add sliced onions and a spoonful of tahini sauce. Mix until combined and set aside.
Toss the cooked beef with fresh parsley and mint for added freshness.
Toast the buns lightly, spread tahini sauce inside, and stuff them generously with the beef shawarma mixture.
