Eggplant Fatteh (Fatet Batenjan)

Instructions

  1. Peel the eggplants then chop into cubes.
  2. Fry the eggplants.
  3. Roast the almonds.
  4. Cut the bread into cubes then deep fry.
  5. Prepare the yoghurt dressing by mixing all ingredients together then set aside.
  6. In a pan, add olive oil then the minced beef.
  7. Season the beef with salt, pepper & nutmeg.
  8. Add the chopped onion & garlic then stir.
  9. Add pomegranate molasses and stir.
  10. Add canned tomatoes then tomato paste.
  11. Add the fried eggplants to the pan then add a drizzle of pomegranate molasses.
  12. In the serving dish, start with a layer of bread then the minced beef then yoghurt and top with almonds. Garnish with pomegranate & parsley.
