Eggplant Fatteh

Bread

  1. Cut bread into cubes
  2. Drizzle olive oil & pepper then toast in the oven

Minced Meat & Tomatoe

  1. In a pan, add butter & minced garlic

    cook until gold 

  2. Cut 3 tomatoes into cubes and add to the pan
  3. Add 1 cup tomato puree
  4. Season with salt & pepper, sugar and vinegar
  5. Leave them to boil then add cooked minced beef
    I had minced beef leftover

Eggplants

  1. Cut eggplants into cubes then grill

Yoghurt Dressing

  1. In a bowl, mix all yoghurt dressing ingredients together

    Yoghurt, lemon zest, lemon juice, vinegar, honey, salt & pepper 

Layering

  1. Layer as follows: Bread, minced meat, eggplant, yoghurt

    Add fresh parsley & pines on top (optional)
