Creamy Potato-based Garlic Dip (Toumiah)

  1. Preheat the oven to 180°C (350°F). Cut the top off a whole garlic bulb to expose the cloves. Drizzle with olive oil, season with salt and pepper, and wrap in parchment paper. Roast in the oven for about 1 hour or until soft and caramelized.
  2. While the garlic is roasting, boil the potato until tender. Drain and let it cool slightly.
  3. In a blender, combine the boiled potato, roasted garlic (use only two cloves for a mild flavor), vinegar, lemon juice, olive oil, and mayonnaise. Blend until smooth, adding a little water if needed to achieve your desired consistency.
  4. Transfer the dip to a container and refrigerate. The dip will thicken as it cools. Serve as a dip with bread or as a spread in sandwiches. Enjoy!
