Heat olive oil in a large pot. Add the chopped onion and sauté with a small piece of butter until softened.

Add the sliced mushrooms to the pot and sauté until golden brown. Save a handful of sautéed mushrooms for garnish.

Add minced garlic and fresh thyme. Stir well and season with salt and black pepper.

Sprinkle flour over the mixture and stir continuously for 2 minutes to remove the raw taste.

Slowly add the broth while stirring to prevent lumps.

Use an immersion blender to puree the soup until smooth.

Stir in the heavy cream for a silky texture. Return the reserved mushrooms to the soup.

Serve hot with toasted bread on the side.
