Remove the thick, hard stem from the cabbage. Slice the cabbage into very thin strips with a knife (do not use a food processor to shred it).
Sprinkle a small amount of salt over the cabbage and rub it well with your hands. Set it aside to release its water.
Shred the carrot finely using a grater or a food processor.
Finely mince the onion.
In a bowl, combine mayonnaise, yogurt, and sour cream. Add lemon juice, vinegar, and powdered sugar.
Add mustard, salt, and black pepper. Whisk all the ingredients together well until the dressing is smooth and creamy.
In a large bowl, combine the thinly sliced cabbage, the finely shredded carrot, and the minced onion. Toss them together.
Pour the prepared dressing over the vegetable mixture. Stir everything together thoroughly to make sure all the cabbage and carrot are coated in the dressing.
