  1. Heat a large pan and add butter and olive oil to prevent the butter from burning.
  2. Add the chicken breasts and sear them on high heat until golden on both sides. Ensure they are spaced apart to cook evenly.
  3. Once the chicken is cooked, remove it from the pan and set it aside.
  4. In the same pan, sauté the chopped onions until they soften and take on a slight color.
  5. Add the sliced mushrooms and stir them with the onions. Season with salt and pepper.
  6. Add the minced garlic and stir well.
  7. Add a second portion of butter and a stock cube, stirring to combine.
  8. Sprinkle the flour over the mixture and stir until evenly coated.
  9. Slowly pour in the water, stirring continuously to ensure the flour dissolves without lumps.
  10. Add the Worcestershire sauce and Dijon mustard if desired, and stir.
  11. Once the mixture boils, add the heavy cream and stir to combine.
  12. Return the chicken to the pan, submerging it in the sauce, and simmer for 10 minutes to allow the flavors to meld.
