For the Sauce

Instructions

  1. Prepare spice mix & use it to marinade the chicken
  2. Chop veggies, mince garlic & grate ginger
  3. With the back of a knife's blade, bruise the lemon grass before using it
  4. In a pan, add oil then sear the chicken breasts and put aside
  5. Add chopped carrot & onion to the pan then season with salt & pepper
  6. Add chopped green bell pepper and red chili pepper
  7. Add minced garlic & grated ginger
  8. Add coconut milk, lemon grass & spinach
  9. Return chicken to the pan then place in a preheated oven for 15 minutes (depending on the chicken's thickness)
  10. Remove lemon grass, add parsley & lemon zest
