Chop the green bell pepper, tomato, and onion into small pieces.

In a bowl, mix salt, black pepper, thyme, chili powder, paprika, garlic powder, parsley, and lemon juice.

Marinate the boneless chicken thighs in olive oil and the spice mixture for at least two hours.
