Freekeh Stuffing Ingredients
Instructions
Chicken Marinade
Mix oil, pomegranate molasses, vinegar, spices, and salt.
Rub the mixture thoroughly over the chicken inside and out. Set aside to marinate.
Prepare the Stuffing
Stir in ground meat, turmeric, black pepper, and chicken stock cube. Cook until the meat is done.
Add freekeh, peas, raisins, and hot water. Let simmer for 10 minutes.
Stuff the Chicken
Fill the chicken cavity with the prepared freekeh mixture.
Secure the opening with toothpicks or kitchen twine to keep the stuffing in place.
Cooking
Place the stuffed chicken in an oven bag. Add the remaining marinade to the bag.
Preheat the oven to 200°C and roast for 15 minutes.
Lower the temperature to 180°C and bake for an additional hour until fully cooked.
