Chicken Schnitzel with Mushroom and Cheese Sauce

Prepare the chicken breasts by cutting them into thin slices.
Coat the chicken in flour, then eggs, then breadcrumbs.
Heat oil in a pan and fry the chicken until golden and cooked through.
In another pan, add olive oil and chopped onion, sauté for 2 minutes.
Add sliced mushrooms and minced garlic then sauté for 2-3 minutes.
Add salt and thyme.
Add the ready-made brown sauce mixture. Add a little water to the mixture and let it boil until the sauce thickens.
Pour the sauce over the fried chicken, then add mozzarella cheese.
Place the dish under the broiler for 2 minutes until the cheese melts.
Serve immediately while hot.
Chef Note
Mozzarella can be replaced with any meltable cheese.
