Blend green pepper, red pepper, and onion with olive oil in a food processor until finely chopped. Set aside.

In the same food processor, blend the chicken breast cubes until minced. Add salt, black pepper, paprika, and breadcrumbs. Blend until fully combined.

Combine the vegetable mixture with the minced chicken. Remove excess liquid from the mix by squeezing gently, and add tomato paste and sumac. Mix well.

Shape the mixture into flattened kofta shapes.

Preheat the oven to 180°C (350°F). Place the kofta on a baking tray lined with parchment paper. Bake for 15 minutes, flip, and brush with the reserved liquid. Bake for another 10-15 minutes until cooked through and golden.

Warm the flatbread or tortilla. Brush with the reserved sauce and sprinkle with sumac, parsley, and chopped onions. Place the kofta inside and serve immediately.
