Description

Creamy broccoli soup with aromatic basil oil is a light and delicious meal perfect for hot summer days. The soup is made by boiling broccoli with onion and carrot, then blending until smooth, and garnished with basil oil and boiled broccoli pieces.

Instructions

  1. Cut the broccoli into small florets and boil in water for 3 minutes, then drain.
  2. In a pot over medium heat, heat the olive oil and add chopped onion and carrot (optional). Sauté for 3-4 minutes until softened.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the boiled broccoli and water or broth. Bring to a boil, then reduce heat and simmer for 30 minutes until tender.
  5. Let the soup cool slightly, then blend in a blender until smooth.
  6. Return the soup to the pot, season with salt and pepper, add the cream and stir. Remove from heat.
  7. To make the basil oil: Blend fresh basil leaves with olive oil and a pinch of salt in a blender until smooth. Strain the oil with a spoon.
  8. Serve the soup hot, garnished with a drizzle of basil oil, boiled broccoli florets, olive oil, tomato, thyme, and a splash of cream.
