Heat oil in a pan. Sauté chicken cubes until browned.
Add onion, garlic, mushrooms, nutmeg, thyme, salt, and pepper. Stir well.
Prepare the béchamel: Melt butter in a saucepan, add flour, and cook until lightly toasted. Gradually add milk while stirring. Season with nutmeg, thyme, salt, and pepper. Optionally, mix in cheddar cheese.
Combine cooked pasta and chicken with the béchamel sauce. Add a bit of pasta water if needed to adjust consistency. Transfer to a baking dish.
Pour remaining béchamel over the pasta mixture. Sprinkle mozzarella cheese on top.
Bake in a preheated oven until the top is golden brown.
