In a large bowl, combine flour, grated cheese, powdered milk, thyme, and salt.

Dissolve yeast and sugar in warm water. Add it to the dry ingredients and mix well.

Gradually add warm water while kneading until a soft dough forms.

Knead the dough thoroughly, then shape it into a ball and coat it with oil. Cover and let it rest for 30 minutes.

Prepare the filling by mixing sausage, pastrami, grated cheese, chili, bell pepper, tomato, onion, and black olives if desired. Season with salt, black pepper, and cumin.

Once the dough has risen, divide it into small equal-sized balls.

Flatten each ball with your hands first, then roll it out with a rolling pin.

Place a portion of the filling in the center of each dough piece and seal securely.

For a professional finish, fold the dough edges to resemble a traditional pastry. Alternatively, press with a fork to secure the edges.

Arrange the stuffed dough on a baking tray, sprinkle water on top, and garnish with sesame seeds or black seeds.

Bake in a preheated oven at 200°C for 20–25 minutes or until golden brown.
