Instructions

  1. Prepare the caramel by melting sugar and water in a saucepan until golden brown. Pour into molds and chill in the fridge.
  2. In a bowl, add eggs, eggs yolks separated from whites, sugar and vanilla and combine.(Watch Video for technique)
  3. Prepare warm milk with a pinch of salt. Gradually add to egg mixture while stirring continuously.
  4. Strain the custard mixture twice for a smooth texture, then pour into caramel-lined molds.
  5. Cover molds with Foyle and place them in a tray with hot water(almost 1/4 of the tray) and bake at 160°C for 1 hour.
  6. Chill in the fridge for at least 4 hours.
