Instructions
In boiling salted water, add the eggs and let it cook for 15 minutes
In a bowl, add rice and lentils and wash/ strain a couple of time
In a pan, on high heat, add oil then add the washed rice & lentils. Season with salt and stir for 4 minutes. Then add water, cover the pan and let it cook on low heat. Half way through cooking, add 1/2 a cup of water and butter then cover again.
Slice onion, add flour and salt and mix well then deep fry until golden.
In a large pan, on medium heat, add oil or ghee then add the peeled cooked eggs and flip until golden on all sides.
Remove eggs from the pan then add sliced eggplant then add garlic, sugar & salt and cook on both sides then add vinegar and some water and let it simmer
