Homemade Pickled Olives

The seasoning mixture includes grated carrots, boiled lemon peel, black cumin, hot peppers, garlic, celery, and a lemon brine. You will get crunchy and tasty pickles in just ten days.

Grate the carrots. Blend the hot peppers in a food processor with 5 cloves of garlic, a quarter cup of celery, and a quarter kilogram of boiled lemon peel. Boil the peel for ten minutes on the stove.
To prepare the pickling brine: For each liter of boiled and cooled water, mix 5 tablespoons of coarse salt, a quarter cup of lemon juice, a quarter teaspoon of citric acid, 1 tablespoon of sugar, and optionally add turmeric or safflower as desired.
Mix all the seasoning ingredients (grated carrots, blended hot peppers, garlic, celery, and boiled lemon peel) together as shown.
Place the olives in sterilized glass jars. Add the seasoning mixture on top, then pour the pickling brine until it completely covers the olives. Extra hot peppers can be added on top.
Close the jar tightly and place a plastic bag over it, then press to seal tightly. Do not open the jar before ten days have passed.
