Creamy Chicken and Mushroom Pies

Description

A delicious pie filled with seasoned chicken pieces, cream, and mushrooms, encased in a crispy pastry. Can be prepared as individual pies or in one pan. Serve hot as an appetizer or main dish.

  1. Cut the chicken breasts into small cubes and season with salt, pepper, and thyme.
  2. Heat olive oil in a pan over high heat and fry the chicken until cooked.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add the chopped onion and cook for 3-4 minutes until softened.
  5. Add the chopped green onion and sliced mushrooms with the same chicken seasonings (salt, pepper, and thyme). Cook for an additional 2 minutes.
  6. Add the butter, minced garlic, and cream. Mix well. Return the chicken to the pan and toss all ingredients together. Add a pinch of nutmeg. (Optional: add caramelized onion). The filling is ready.
  7. Use pie pastry (store-bought or homemade).
  8. Place a spoonful of filling in the center of each dough circle, leaving a border.
  9. Add Parmesan cheese on top.
  10. Brush the edges of the dough with egg wash (beaten egg with a tablespoon of water).
  11. Seal the pie using a fork and press the edges to close.
  12. Brush the pie surface with remaining egg wash and sprinkle sesame or black seeds.
  13. Bake in a preheated oven at 180°C until the pies are golden and crispy. Serve hot.

Chef Note

Other types of cheese can be used as desired. It is preferable to brush the pastry with egg and milk to get an attractive golden color.
