Description

Learn how to make delicious and flaky cheese pastries. This recipe is easy and yields amazing results, with a soft texture and great flavor thanks to the natural cheese filling. Use milk and butter for best results.

  1. Mix flour, yeast, sugar, baking powder, salt, and milk powder.
  2. Add oil and yogurt, then knead with warm water for about 15 minutes. Use about 1.5 to 2 cups of water per kilo of flour.
  3. After kneading, place the dough in an oiled bowl, cover, and let it ferment for about 2 hours, or preferably leave in the fridge for 12 hours.
  4. Divide the dough into balls, each about 140g. Dust with flour and roll each ball into a rectangle, trim edges, then cut into strips with a knife. You can also cut into cubes.
  5. Fill the dough with cheese and dill or any other filling. Seal the edges well.
  6. Place the pieces in a tray greased with a little oil, and let them rise for half an hour.
  7. Brush the tops with a mixture of egg yolk, milk, and a few drops of vinegar.
  8. Preheat the oven to 200°C, and place 2 cups of ice at the bottom of the oven while baking. Bake for half an hour.
  9. When removing the pastries, brush them with butter & dill. The secret of using ice in the oven makes the pastries better.

Chef Note

For flaky pastries, let the dough ferment in the fridge for 12 hours. Place ice cubes in a tray under the oven during baking for a soft and golden texture.
