Stuffed Chicken & Rice with Peas, and Carrots

This recipe offers chicken stuffed with rice seasoned with spices, peas, and carrots, with a rich sauce. The chicken is cooked until fully done and served with rice garnished with boiled peas.

Grind the whole spices to prepare the spice mix for the recipe.
In a pot, add oil to cook the chopped liver and gizzards.
Add onion and garlic and sauté. Add some of the spice mix prepared.
Add raisins and rice and stir well. Add turmeric and boiling water, cover, and cook until rice is done.
To prepare the chicken stuffing: mix julienned onion with 1 tbsp of recipe spice blend, ground cardamom, then stuff the chicken with this mixture and close it well.
Place onion, carrots, potatoes, garlic, celery, oil, and recipe spice blend in a roasting pan, stir, then spread the vegetables and place the chicken on top. Put the pan in the oven until the chicken is cooked.
Once the rice is cooked, add the boiled peas and carrots and mix with a fork to avoid mashing the rice.
