Russian Olivier Salad, or Russian salad, is a beloved traditional salad. This quick recipe combines boiled potatoes, peas, carrots, and green beans with a creamy dressing of mayonnaise, vinegar, and mustard. Pieces of smoked turkey and boiled eggs add rich flavor, while pickles provide a refreshing crunch.

  1. In a bowl, mix mayonnaise, yogurt, sugar or honey, vinegar, lemon squeeze, mustard, salt, and pepper.
  2. Boil half a bag of peas and carrots and half a bag of green beans.
  3. Boil the potatoes, then dice them into small pieces.
  4. Dice the pickles into small pieces.
  5. Chop the parsley.
  6. Dice the smoked turkey into small pieces.
  7. Boil the eggs, separate yolks from whites, then dice each very small.
  8. Add all diced ingredients to the dressing and mix well.
  9. Serve and enjoy.
