Heat butter with a little oil in a heavy pot. Add the small-cut beef cubes and let them sear well until browned.

Season with salt, black pepper, bay leaves, cardamom, and mixed spices.

Once the meat develops color, add a small amount of water, cover, and let it cook slowly over very low heat until tender. Add small splashes of water only when needed, allowing it to cook gently for a long time until perfectly soft.

In a separate pot, combine sliced onions, carrot, and celery.

Season with bay leaves, cardamom, salt, and black pepper.

Add a small amount of water, cover, and cook over very low heat until the vegetables become very soft and flavorful without browning.

When both the meat and vegetables are ready, add the softened vegetables to the beef.

In a separate pan, melt a little butter and toss pre-fried potatoes with fresh coriander, salt, and black pepper until coated and heated through.
