For the Potatoes:

Instructions
Peel the potatoes well.
Cut the potatoes into cubes.
Season with olive oil, salt, and black pepper and mix well.
Cook in the air fryer or oven until partially cooked.
Remove and shake the potatoes, then return them to continue cooking until done and slightly crispy.
In a bowl, mix all dressing ingredients together.
Add the potatoes and mix gently to combine.
Finish with a drizzle of olive oil if desired and mix lightly.
