Grate the onion and tomato separately. Squeeze them to extract their juices. Reserve the juices for later.

In a large bowl, combine the minced meat, grated onion, grated tomato, garlic, parsley, and spices. Add the baking powder.

Mix the ingredients thoroughly until the mixture becomes sticky and well-combined.

In a small bowl, mix the onion juice, tomato juice, oil, salt, and black pepper. This will be used to wet your hands and shape the kofta. You will then brush the remaining water on the shaped kofta.

Preheat your oven to 200°C. Bake the kofta for 20-30 minutes, turning halfway to ensure even cooking.

For a smoky, grilled flavor, place a piece of hot charcoal in the tray with the cooked kofta. Add a drop of oil to the charcoal to create smoke, then cover the tray tightly for a few minutes.
