Instructions
Remove green head of eggplant.
Cut open in the middle then boil it.
In a mixing bowel add garlic, spicy green pepper, red pepper, chilli Powder (optional), green coriander, celery, lemon Juice, vinegar, salt, cumin.
Stuff the boiled eggplant with the filling inside.
To make soaking solution add salt, sugar, and vinegar to the water in the preserving container.
Leave it to soak for 1-2 days before serving.
