Description

Dive into a refreshing and flavorful journey with Khyariyeh, a delightful zucchini and yogurt dish! This unique recipe, popular in Middle Eastern cuisine, combines the cool creaminess of yogurt with the delicate taste of zucchini.

Khyariyeh can be enjoyed warm or chilled, making it a versatile option for any meal. Imagine plump zucchini cubes simmered until tender and then embraced by a savory yogurt sauce. The subtle tang of yogurt complements the zucchini's freshness, while a hint of garlic and fragrant herbs like mint add depth to the flavor profile.

This dish is not only delicious but also surprisingly versatile. Khyariyeh can be enjoyed on its own as a light lunch or appetizer. For a more substantial meal, serve it over rice or vermicelli noodles. You can even add protein like ground beef or chicken for a heartier variation.

Instructions

  1. In a wok or pan over medium heat, add ghee, oil, and sliced zucchini. Saute until zucchini starts to wilt. Then, add salt, pepper, garlic powder, and ground coriander. Remove from heat when the zucchini begins to change color.
  2. In the same wok, add the ground beef, salt, pepper, nutmeg, cinnamon, garlic powder, cardamom, chili pepper, and onions. Stir until fully cooked. Re-add the zucchini to the wok and stir.
  3. In another pot with the heat turned off, add the yogurt, starch, minced garlic, water, salt, and pepper. Turn on the heat and stir, cook for 2 minutes until the consistency becomes light. Add the yogurt sauce over the zucchini and beef, mix together and it's ready to be served with rice.
