  1. In a pan or cast iron, crack the eggs (off heat). Add butter.
  2. Turn on heat and let them cook for about 30 seconds, while stirring.
  3. Stir and Rest: After 30 seconds, take the pan off the heat and let the eggs rest while stirring occasionally. After 30 more seconds, return the pan to the heat and stir again. Repeat this process for about 3 minutes until you get the creamy texture you want.
  4. Add Cream Cheese: As the eggs start to form soft curds, add a dollop of cream cheese (or butter) and stir it in to make them extra creamy.
  5. Serve: Once the eggs are creamy and just cooked through, take them off the heat immediately. Don’t let them overcook. Serve right away and enjoy!
