Sweet Potato Crème Brûlée

  1. Preheat the oven to 180°C (350°F). Bake the sweet potato for about an hour or until soft.
  2. In a pan, whisk together the egg yolks and sugar until the mixture is pale and thick. Slowly add in the milk and heavy cream, whisking continuously. Add a splash of vanilla extract if desired.
  3. Cut the baked sweet potato in half. Mash the sweet potato flesh then pour the crème brûlée mixture over the sweet potato.
  4. Sprinkle a thin layer of sugar over the top of each sweet potato. Using a kitchen torch or a hot spoon, caramelize the sugar until it forms a crispy, golden crust.
