Sweet Potato Crème Brûlée

Preheat the oven to 180°C (350°F). Bake the sweet potato for about an hour or until soft.

In a pan, whisk together the egg yolks and sugar until the mixture is pale and thick. Slowly add in the milk and heavy cream, whisking continuously. Add a splash of vanilla extract if desired.

Cut the baked sweet potato in half. Mash the sweet potato flesh then pour the crème brûlée mixture over the sweet potato.

Sprinkle a thin layer of sugar over the top of each sweet potato. Using a kitchen torch or a hot spoon, caramelize the sugar until it forms a crispy, golden crust.
