Instructions
Chicken Stuffing
Soak the rice for 10 minutes in hot water then drain.
Add onion. ghee, salt & pepper to the rice.
Prepare the chicken and make room under the skin.
Stuff the chicken with the rice and make sure to add rice under the skin. Do not overstuff the chicken.
Stuff it with its liver, gizzards & heart.
Cooking the Chicken
Prepare a pan with boiling water and fill it with onion, bay leaves, mastic, cardamom, salt & pepper.
Add the stuffed chicken and let it cook for 15 minutes on high heat.
Lower the heat and let it cook for another 30 minutes. Then remove from water immediately.
In a pan, add ghee & oil and pan fry the chicken until colored.
