  1. In a large bowl, combine the flour, toasted sesame seeds, sugar, baking powder, and salt. Stir to mix the dry ingredients well. Set aside.
  2. In a slightly larger bowl, add the soft unsalted butter, oil, baladi qeshta, and yogurt. Whisk these ingredients together for about 3 minutes until the mixture becomes creamy and well combined.
  3. In a separate small bowl or cup, combine the warm milk, instant yeast, and sugar. Stir gently and let it sit for a few minutes until the yeast activates and forms a foamy layer on top.
  4. Pour the creamy wet mixture (butter, oil, qeshta, yogurt) into the bowl with the dry ingredients.
  5. Add the activated yeast mixture.
  6. Gently bring the dough together with your hands. Do not knead vigorously like regular bread dough. Just mix until it forms a cohesive ball, roughly for 5 minutes.
  7. Test the dough: It's perfectly mixed when you can take a small piece and it breaks cleanly (doesn't stretch endlessly) and doesn't stick to your hands at all.
  8. Cover the dough and let it rest in a warm place for 30 minutes.
  9. After the first proofing, prepare your baking trays. Divide the dough into small, evenly sized pieces. Shape each piece into a small ball, then gently flatten it into a disc.
  10. Arrange the shaped qoras on the prepared baking trays, leaving some space between each.
  11. Cover the shaped qoras on the trays and let them proof again for 30 minutes to 1 hour, or until they look visibly puffed up.
  12. Preheat your oven well to 200°C.
  13. Place the baking tray on the rack just before the bottom one (second from bottom).
  14. Bake for approximately 10 minutes, or until the qoras develop a light golden color on both the top and bottom.
  15. Immediately after removing the qoras from the oven, cover them tightly with a clean cloth or foil. This traps steam and ensures they remain incredibly soft.
  16. Once completely cooled, place them in airtight bags and transfer them directly to the freezer for long-term storage.
  17. Reheat only the amount you need. Serve warm with cheese, Nutella, or any topping you desire.
