Shrimp Pasta Salad

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Marinate the shrimp with salt, black pepper, smoked paprika, and thyme.
  3. Heat olive oil in a skillet over medium-high heat and cook the shrimp for about 2 minutes on each side until pink and opaque. Set aside.
  4. Prepare the dressing by whisking together mayonnaise, olive oil, vinegar, mustard, lemon juice, chopped dill, and the vegetable broth cube (if using) until smooth.
  5. In a large bowl, combine the cooked pasta, red kidney beans, sweet corn, cherry tomatoes, dill, and parsley.
  6. Add the cooked shrimp and toss everything together gently.
  7. Pour the dressing over the salad and mix well to coat all the ingredients.
  8. Serve in a bowl, garnished with a few shrimp on top and toasted bread drizzled with olive oil and thyme on the side.
