Shish Tawoouk Fatteh

In a bowl, mix chicken thighs, shish tawook mixture, olive oil, yoghurt and leave it in the fridge for 2 hours or minimum half an hour.

In a very hot pan, cook the chicken thighs and then set them aside.

Add to the pan bell pepper till it's sautéed and then set it aside.

Add eggplant to the pan till it is cooked then set it aside.

Add the onion to the pan till it is caramelized, then set it aside.

In the same pan, add olive oil, tomato paste, chili pepper (optional) and tomato juice.

Season with salt and black pepper.

Melt one broth cube in water.

In a bowl, add tahini, the broth, Greek yoghurt or normal yoghurt, lemon, olive oil, salt, black pepper and garlic.

In the serving plate, layer the roasted bread & cover it with broth soup, then add a layer of cooked rice, tomato paste, the cooked veggies, shish tawook, yoghurt sauce and garnish with micro-greens, roasted almonds and peanuts.
