Russian Salad (Potatoes & Carrots)

Cut the potatoes into cubes and boil them in salted water for about 2 minutes.
Add the diced carrots and cook for another 2 minutes.
Add the peas at the same time (or steam them separately if you prefer).
Drain the vegetables and let them cool completely.
In a small bowl, mix together the olive oil, vinegar, salt, pepper, and minced garlic.
Add the mayonnaise and stir until the dressing is smooth and well combined.
Once the vegetables are fully cooled, add them to the dressing.
Stir gently until all the vegetables are coated with the dressing.
