Description

Make a vibrant and easy Rice Salad, a complete meal in itself, featuring fluffy Egyptian rice, colorful vegetables, chickpeas, and a zesty lemon-honey dressing. Add grilled chicken for extra protein!

Instructions

  1. Cook the Egyptian Rice according to package instructions until tender and fluffy. Set it aside to cool.
  2. Prepare the Chicken. Mix the Chicken Breast Slices with all the Chicken Marinade ingredients: Lemon Juice, Lemon Zest, Curry Powder, Paprika, Dried Thyme, Salt, and Black Pepper.
  3. Sauté or grill the chicken until cooked through, then slice it into bite-sized pieces.
  4. In a large bowl, combine the cooled Cooked Rice, Diced Red Bell Pepper, Diced Yellow Bell Pepper, Diced Cucumber, Chopped Fresh Dill, Sliced Green Olives, and Cooked Chickpeas. Add the cooked and sliced Chicken if you are using it.
  5. For The Dressing, whisk together the Lemon Juice, Lemon Zest, Minced Garlic, Salt, Black Pepper, White Honey, and Olive Oil in a small bowl until well combined.
  6. Pour the Dressing over the rice and vegetable mixture. Toss everything gently until well coated. Serve immediately.
