Slice courgette, aubergine & tomatoes into very thin slices

Grill bell peppers

In a blender, add the can of peeled tomatoes then add fresh thyme, rosemary, garlic then the grilled bell peppers

In a pan, add olive oil (not all the amount) then saute the onion, and add the blended tomatoes

Add the mixture to a round pan and arrange the veggies like in video

Cover with baking sheet then bake in the oven for 30 minutes at 190 degrees

In a bowl, add olive oil and mix with fresh parsley and basil
-
After 30 minutes, take the pan out of the oven, add the parsley basil mix on top then bake again (uncovered) for 15 minutes
