  1. Slice courgette, aubergine & tomatoes into very thin slices
  2. Grill bell peppers
  3. In a blender, add the can of peeled tomatoes then add fresh thyme, rosemary, garlic then the grilled bell peppers
  4. In a pan, add olive oil (not all the amount) then saute the onion, and add the blended tomatoes
  5. Add the mixture to a round pan and arrange the veggies like in video
  6. Cover with baking sheet then bake in the oven for 30 minutes at 190 degrees
  7. In a bowl, add olive oil and mix with fresh parsley and basil
  8. After 30 minutes, take the pan out of the oven, add the parsley basil mix on top then bake again (uncovered) for 15 minutes
