Wash the cucumbers and optional green chilies very well. Trim only the ends (top and bottom) of the cucumbers.

Prepare a clean glass jar. Place the whole or sliced garlic cloves in the jar. You can also add optional mint leaves or celery leaves.

Add the prepared cucumbers and optional green chilies to the jar.

In a separate bowl, prepare the brine by combining boiling water with salt, vinegar, and sugar.

Stir well to ensure the salt and sugar dissolve completely. Do not wait for the water to cool; use it hot.

Pour the hot brine directly over the cucumbers in the glass jar, ensuring the cucumbers are completely submerged.

If desired, add chili powder/flakes for extra heat. Seal the glass jar tightly.

Flip the sealed jar up side down for a short period to help mix the contents.

The pickled cucumbers will be ready to eat the next day. Once ready, slice the pickled cucumbers and transfer them to a storage container. Store in the refrigerator.

When serving, add a dash of any oil and chili paste (harissa) on top for extra flavor, if desired.
