In a pan, heat some olive oil then add minced onion, celery and carrots and stir.
Add whole garlic then add ginger and potatoes. Stir well.
Add stock to cover the mixture, then add pumpkin and stir.
Add salt, pepper, cumin, nutmeg, and bay leaves.
When the vegetables are cooked, blend together, but not finely.
Add chopped spinach and lemon juice, mix well and serve.
