Pink Sauce Pasta with Soy Protein

Cook the pasta according to the package instructions, then drain it and reserve some of the cooking water.

Soak the soy protein in warm water for 10 minutes, then drain it and set aside.

Heat olive oil in a pan over medium heat and sauté the diced onion and minced garlic until soft.

Add the ground beef (if using) and the soaked soy protein to the pan. Stir and cook until the meat is browned and the soy protein is well mixed in.

Add the spices (salt, paprika, onion powder, black pepper, cardamom, and cinnamon) and stir well.

If using, add the fresh mushrooms and cook for a few minutes.

Stir in the tomato paste and cook for another 2–3 minutes.

Add pasta cooking water to the pan and simmer on low heat then add cooking cream.

Combine the pasta, meat/soy mixture, and creamy sauce in the pan. Stir until the pasta is evenly coated.

Add cheese mix or mozzarella, and cover until the cheese melts.

Garnish with parsley and serve hot.
