  1. Wash the eggplant, make sure to choose small ones, and remove the head.
  2. Add the eggplant to the boiled water and leave for 10 minutes, then remove it from the boiling water and set aside.
  3. In a food processor, combine garlic, carrot, hot pepper, bell pepper, parsley, salt, olive oil, lemon juice, black pepper, dried coriander, mixed spices, and hot chili.
  4. Blend until mixed.
  5. Cut each eggplant from one side and add a spoonful of the prepared mixture to each.
  6. Pour the remaining mixture over the stuffed eggplants, using the boiling water as needed. (Watch the video for the technique.)
