Wash the potatoes thoroughly and cut them into strips.

Soak them in a bowl of cold water with vinegar for 1 hour. Do not add salt.

After soaking, pat the potatoes dry with a kitchen towel.

In a deep pot, place the dried potatoes along with a whole garlic clove and a sprig of rosemary or thyme.

Cover the potatoes with cold frying oil.

Heat the oil on medium heat and leave the potatoes undisturbed.

Only stir when the potatoes start turning golden to prevent them from breaking.

Fry until the potatoes are golden and crispy.

In a bowl, combine all the seasoning ingredients. Mix well and set aside.

Remove the potatoes from the oil and place them on a paper towel to drain excess oil.

Sprinkle generously with the prepared spice mix while the potatoes are still hot.
