Description

Whip up a quick and complete Pasta Salad with tender chicken, vibrant veggies, and a zesty mayonnaise-lemon dressing. Perfect for a fast, flavorful, and easy meal!

Instructions

  1. Boil the Pasta according to package directions until al dente. Drain and rinse with cold water to cool, then set aside.
  2. Season the diced Chicken Breasts with Paprika, Garlic Powder, Onion Powder, and a Pinch of Salt and Black Pepper.
  3. In a skillet with a little Oil, cook the chicken over high heat until it's cooked through and lightly browned on all sides.
  4. Remove from heat and let cool, then cut into small cubes if not already.
  5. Dice the Mixed Bell Peppers, slice the Green Olives, and chop the Fresh Dill.
  6. In a large bowl, combine the cooled Cooked Pasta, Diced Bell Peppers, Sliced Green Olives, and Chopped Fresh Dill.
  7. Add the cooked Chicken cubes.
  8. In a separate small bowl, whisk together Mayonnaise, Lemon Juice, Dried Mint, Salt, and Black Pepper until well combined and smooth.
  9. Adjust the consistency with a little water or more lemon juice if needed.
  10. Pour the Dressing over the pasta and vegetable mixture. Toss everything together until well coated.
  11. For best results, refrigerate the salad for about 30 minutes before serving to allow the flavors to meld.
