Description
This is an easy and quick recipe for oven-roasted vegetables. You can use any vegetables you have on hand, with a simple seasoning of salt, pepper, thyme, and olive oil. Once the vegetables are cooked, add white cheese and broil until golden, then garnish with fresh parsley. A tasty and nutritious dish that can be enjoyed on its own or as a side dish.

Instructions
Cut the vegetables into equal-sized pieces.
Season the vegetables with salt, black pepper, thyme, and a little olive oil.
Place the vegetables in a baking tray and bake in the oven at 180°C for half an hour or until tender.
After cooking, spread the grated white cheese on top and return the tray to the oven to brown the top.
Sprinkle chopped fresh parsley on top and serve.
Chef Note
You can use any vegetables you have available, such as zucchini, eggplant, bell peppers, and tomatoes. It's best to cut the vegetables into equal-sized pieces to ensure even cooking. You can add grated cheese before serving for a creamy texture.
