Instructions

  1. Cut the chicken into cubes and season with salt, pepper, curry, turmeric, paprika, and oil.
  2. In a pot over high heat, put the butter and oil and add the chicken, stir until the chicken changes color. Add the diced onion while continuing to stir.
  3. Set the chicken and onions aside in the pot, and in the other half, add some oil, chopped garlic and ginger. Stir until their aroma appears. Mix them with the chicken.
  4. Add carrots, peas, bell peppers, and sweet corn, stir all ingredients together for minutes.
  5. Add the washed and drained basmati rice to the pot and stir well with the previous ingredients.
  6. Cover all ingredients with broth or boiling water and spices (as available), add a piece of butter. Reduce the heat to low, cover the pot, and cook for 20 minutes.
  7. It can be served as is or with some yogurt sauce on top.
