  1. In a bowl, mix onions, vinegar, pomegranate molasses, meat spices, salt and pepper together using your hands. Massage and cover the mutton shoulder with the marinade after making slits with a knife through the meat, then wrap with aluminum foil. Keep in the fridge for a day before cooking.

  3. Cook in a preheated oven at 240 degrees for the first hour, then at 190-200 degrees for and hour and half, add water whenever needed.
  4. Remove the foil and cook uncovered for another 15 minutes after spooning some of the sauce over the meat. Serve with cooked vermicelli and some nuts.
