In a bowl, mix onions, vinegar, pomegranate molasses, meat spices, salt and pepper together using your hands. Massage and cover the mutton shoulder with the marinade after making slits with a knife through the meat, then wrap with aluminum foil. Keep in the fridge for a day before cooking.

When it's time to cook the meat, remove from the foil and place in a parchment paper. Wrap tightly with foil paper, and place it a baking dish, pour water in the dish.
