Preheat oven to 200°C.
Pierce eggplant several times with a knife, then roast in the oven for 45 minutes to 1 hour or until tender.
Remove from oven and let cool slightly. Peel off the skin and mash with a fork.
Add minced garlic, lemon juice, olive oil, and salt to the mashed eggplant. Mix well.
Stir in diced green pepper, parsley, and tomatoes.
Combine all ingredients gently. Garnish with pomegranate seeds and optionally drizzle with pomegranate molasses before serving.
