Description

Whip up a batch of delicious Mini Banana Pancakes! These fluffy, tender pancakes with a hidden slice of banana make a perfect breakfast or snack.

  1. In a large bowl, combine the dry ingredients: All-Purpose Flour, Baking Powder, and a Pinch of Salt. Stir them together.
  2. In a separate bowl, mix the wet ingredients: Milk, Eggs, Melted Butter, and Vanilla Extract. Stir until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix just until combined. Do not over-mix.
  4. Slice the Bananas into rounds of your preferred thickness.
  5. Heat a non-stick pan over medium heat. Add a very small amount of Oil if needed, just to prevent sticking.
  6. Dip each Banana Slice into the pancake batter, ensuring it's well coated.
  7. Place the coated banana slices onto the hot pan. Cook for about two minutes on each side, or until they turn golden brown and fluffy.
  8. Remove the pancakes from the pan and serve immediately.
