Minced Chicken Drumsticks

Instructions

  1. Boil the chicken with the ginger, garlic, cinnamon, bay leaf, cloves and cardamom, till cooked through
  2. Remove the meat from the bones - keeping the bones aside, and blitzing the chicken in a food processor
  3. Add the chicken, potatoes and the remaining ingredients of the minced drumsticks in a large bowl
  4. Mix everything together
  5. Take a bit of the mixture, flatten it out in the palm of your hands, add a bit of the mozzarella cheese, then put the bone back and seal it with the chicken mixture till it looks like a drumstick again
  6. Once you’re done, prepare the breading station. A bowl with two eggs. A bowl with flour (season with salt and pepper), and a bowl with the Panko Cheetos mixture
  7. Start dipping each drumstick into the flour, shaking off any excess, then the eggs, then the Panko
  8. When done, fry till golden (everything is already cooked, so this will take no time)
  9. I added some fresh coriander and sriracha but that’s totally optional
